Description:Crushed Chillies

Crushed chillies are made from crushed and flaked, sun dried whole red chillies. In cooking, crushed chillies tend to be used as a replacement for dry whole chillies as they tend to release their flavour more quickly. Crushed chillies are also widely used as a sprinkle on spicy topping especially on pizzas and casseroles. They not only add heat but also colour and texture, making any dish more attractive looking.

Recipe for Italian open sandwich:
Ingredients: 4 hot dog bread rolls, 1/4 cup blanched and chopped tomatoes, 1 tbsp crushed garlic cloves, 1 tbsp chilli flakes, 1 cup grated cooking cheese or mozzarella, 8 sliced black olives, 1 tbsp olive oil, salt to taste

Method:
Cut each hot dog roll lengthwise into two. Mix the toppings and divide into 8 equal portions. Spread each portion of the topping on each cut side of the roll. Bake in pre-heated oven at 200C (400F) for 2 to 3 min or until the cheese just starts to melt. Cut into pieces and serve hot.
