Coriander seeds have a fragrant flavour that is reminiscent of both citrus peel and sage. They are used in an array of cuisines around the world. The use of coriander ca be traced back to ancient times making it one of the oldest spices. It is native to the Mediterranean and Middle Eastern regions and has been used in Asian countries for thousands of years. In its seed form, it was used as a spice in both greek and Roman cultures, the latter also used ground coriander seeds as a preserve for meats. The early physicians, including Hippocrates, used coriander for its medicinal properties, as well as an aromatic stimulant.
