Five Spice Lamb
A mouth watering lamb dish, using aromatic five spice, that is perfect for an informal dinner party.
Ingredients:
2 tbsp Vegetable oil
1.5kg Leg of lamb
1 Onion
2 tsp Root ginger, grated
1 Garlic clove
1 tsp
Chinese five spice powder
2 tbsp
Hoi sin sauce
1 tbsp
Light soy sauce
300ml Passata
250ml Lamb stock
1 Red pepper
1 Yellow pepper
30ml Fresh coriander
15ml
Sesame seeds
Preparation:
Preheat the oven to 160°C (gas 3).
Prepare the veg by chopping the onion, grating the ginger and crushing the garlic. Set aside.
Make stock using a lamb stock cube.
Chop the coriander and mix with the toasted sesame seeds. Set aside.
Bone and cube the leg of lamb and in a flameproof casserole using 2 tbsp of oil brown the lamb in batches using a high heat, set aside.
Add the ginger, garlic and onion to the casserole dish and cook for about 3 minutes until softened.
Put the lamb back in the dish, stir in the five spice powder, soy and hoi sin sauce, passata, stock and seasoning.
Bring to the boil, add a cover and cook in the oven for 1¼ hours.
Take the casserole out and add the peppers, re-cover and put back for another 15 mins or until the lamb is very tender.
Sprinkle with the coriander/sesame seed mix and serve with your choice of cooked rice.
