Yusheng – Chinese New Year
Yusheng, sometimes known as lo hei, or prosperity toss, is a raw fish salad usually eaten during Chinese New Year. The salad comprises of shredded vegetables, fruit, various condiments, crispy bits and strips of raw fish (often salmon). The dish has been popularised as a cultural activity to celebrate Chinese New Year in Singapore, Malaysia and Indonesia.
The dish is served with all the components of the salad separated. The dish is finished at the table, with all the condiments and sauces added over the prepared fish and vegetables, and all diners joining in with mixing the salad together with their chopsticks, saying “lo hei! Lo hei!”. The higher you toss the salad, it is believed the greater the luck for the coming year, so expect food to go flying!
